Rolling In The Dough

With the Holidays approaching there will be warm cookie smells in the air. Don't miss out on these....

Dropped Makeup Method:

1. Select the proper size scoops for accurate portioning
2. Drop the cookies onto sheet pans(be sure to prep them so the cookies do not stick)
3. When dropping cookies be sure to allow enough room for cookies to spread while baking

 

Cutout Makeup Method:

  • Be sure to chill dough thoroughly
  • Roll out dough to approximately 1/8 inches thick(make sure to flour surface)
  • Cut out cookies to desired design using cookies cutters
  • Place cookies on a prepped sheet pan
  • Bake!




Molded Makeup Method:

1. Chill dough
2. Roll out dough into long cylinders about 1 inch thick.
3. Use a knife to cut out desired length of cookie
4. Place cookie on prepped sheet pan.
5. Be sure to flatten the cookies with weight or a mold.

Icebox Makeup Method:


  • Scale the dough so the pieces are uniform in size
  • Form dough into cylinders
  • Be sure to wrap the cylinder in wax paper and chill over night
  • Unwrap dough and cut into size of choice.




Bar Makeup Method:

1. Scale the dough
2. Form the dough into cylinders about the length of the sheet pan
3. Place approximately 3-4 strips on each greased sheet pan
4. Now the fun part- flatten the dough by using your finger to make the dough 3 inches wide and 1/4 inches thick.
5. Bake!
6. Just after baking (while the cookies are still warm) cut into each bar about a 1 1/3 inch wide strip


Sheet Makeup Method:

  • Spread cookie mixture into prepared pan
  • Bake!

Wafer or stencil Makeup Method:

1. Use a silicone mat to line the sheet pan
2. Use a ready made stencil
3. Place the stencil on mat
4. Spread batter across stencil to make a thin layer that fills the mold



Piped Makeup Method:

  • Fit a pastry bad with top of desired size and shape
  • Fill with cookie dough
  • Press out cookies into desired shape
  • Bake!
